Ye Ye Wan Than Mee

Established since 2010 Ye Ye Wan Tan Mee, as the name suggests, was first started by my beloved late grandpa who has spent most of his time dedicated to cooking. He was always the good cook in the family.. When I was young, I used to sit across the kitchen and watch him prepare meals from scratch. He started out cooking meals for the family and decided to set up this business after his retirement. Sadly, he passed away in the fifth year and the business was handed over to his son. Fortunately, his recipe was not forgotten. The Mala (aka spicy) sauce and other recipes that he invented is still used in the business till this day. However, the first version was no longer ideal, the current owner decided to upgrade some of the recipes to popularize the taste and make it more savory. One of our signatures is the upgraded dark sauce, it simmered with multiple condiments, under medium heat for hours, as well as the wan tan, an adequate amount of powders is added to improve the cohesiveness of the filling. “爷爷云吞面”,顾名思义,最初的创办人就是我最敬爱已故的爷爷。退休后,他大部分的时间都花在烹饪上。他一直是家里的”主厨”,因为他很擅长研究不同风格的菜色。小时候,我常跟着他在厨房打转,看着他为家人做饭。之后因为机缘巧合下,他开始经营这家面摊,也成了让他在退休生活里发挥兴趣的小小舞台。不幸的是,他在经营的第五年离世了,从而生意也转交给儿子继续经营。很幸运的是,爷爷所研发的自制”麻辣”酱料的秘方没有失传,也仍然被使用至今。然而随着人们口味的变化,现在的经营人以保留最初的秘方为前提,对酱料做进一步的改良,以符合大众口味,同时也让口感变得更佳。我们的招牌之一是改良版的黑酱汁,它是由多种不同的的调味品一起烹调,再用中火熬煮数小时;以及在云吞的馅料里加入自行研发的秘方,以让馅料变得更扎实。
